Uni is bought on sight, so it is sorted the way it should be. Every lobe is lifted from the shell by hand and packed the day it lands, which is why the tray arrives with the pieces standing up glossy and whole rather than slumping into a soft paste. The colour tells you the rest: deep amber shading into burnt orange, the mark of an urchin that has fed well and carries the round, full sweetness that is worth paying for. It sits on the tongue for a moment, then gives way.
