They are head-off and shell-on, with the tail left on - the cut that holds moisture in the flesh and looks right on the plate. Thaw them and eat them cold, which is how they show best, or send them straight into a hot pan or a simmering broth. Sweet, delicate and clean, with none of the fishiness that follows warm-water shrimp around.
